Quarantine Recipes - Cornish Pasties and Chicken Veggie Pasta

Cornish Pasties  


Homemade pastry: 
I use a food processor for ease, can be mixed by hand. 
1 cup flour
Pinch of salt (only needed if using unsalted butter)
2 oz butter 
2-3 tablespoons of water (just enough to start holding the mixture together)

1/2 cup of rump steak (cut into small cubes)
1/2 cup of potato (diced small about 1/4 inch)
1/2 cup of rutabaga (diced small about 1/4 inch)
1/4 cup of onion (finely chopped)
Salt and pepper to taste
1 egg (lightly beaten)

•Flour, salt, and butter mixed to a fine sand, add water tablespoon at a time to start holding together•

•Once dough is complete, roll into a ball, wrap in cling wrap, place in fridge for 30 minutes.
•Heat oven to 425°
•After 30 minutes separate dough into four even sections.
•Roll each piece out into about the size of a tea plate (roughly 6-7inches).
•Steak, rutabaga, potato, and onion need to be mixed in a bowl, add salt and pepper to taste.
•Divide the mixture into the four dough sections evenly, place to one side.
•Brush edges of dough with egg. 
•Fold the circles in half so edges meet. Crimp edges to create a tight seal. 
•Brush dough with egg wash. 
•Place filled doughs on greased pan, put into oven, cook for 45 minutes or until golden brown.


Chicken Veggie Pasta  


1 lb chicken breast, cut into pieces
1 lb pasta (your choice of noodles, I used regular straight noodles)
1 jar pasta sauce 28oz(I used vodka sauce)
Eggplant (large, chopped into 1/4 inch cubes)
Zucchini (cut into 1/4 inch cubes)
Onion (diced)
1 tablespoon garlic
Salt and Pepper to taste
tsp oregano
tsp basil
tsp dill weed
tsp thyme

•Bring water to a boil, cook pasta according to box directions.
•Heat oil in a pan, add chicken. Cook through. Remove from pan.
•Add vegetables into heated pan. Cook until vegetables are soft, and onions are translucent.
•Return chicken to pan, add seasonings to mixture.
•Mix together vegetable/chicken mixture with noodles and sauce.
•Serve.
