Quarantine Recipes - Lasagna Roll-Ups and Turkey Meatballs
These recipes are from an RCBM patient who loves to cook and has struggled with an eating disorder. Lasagna Roll-Ups

12 uncooked lasagna noodles
2 large eggs, lightly beaten
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2-1/2 cups whole-milk ricotta cheese
2-1/2 cups shredded part-skim mozzarella cheese
1/2 cup grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground nutmeg
1 jar (24 ounces) of your favorite brand of pasta sauce
•Preheat oven 375 degrees
•Cook lasagna noodles, drain and lay flat
•Mix ricotta, spinach, Parmesan, salt, pepper, nutmeg, and eggs.
•Spread cheese mixture over each lasagna noodle. Sprinkle some mozzarella over the mixture then roll up.
•Pour some pasta sauce in a casserole dish and place rolled lasagna side by side.
•Pour more sauce over the lasagna and add mozzarella on top to finish
•Bake covered for 20 minutes
•Uncover and bake another 5-10 minutes
Turkey Meatballs

1 pound of turkey
1 egg
1 teaspoon parsley
½ cup seasoned bread crumbs moistened with milk to soften
¼ pound grated Parmesan
•Do not over mix
•Bake at 350 degrees for 20 minutes or until cooked through
•Serve as shown
